While most of their lineup rotates seasonally, Always stays constant — a genuine homage to traditional Italian amaro built with Pacific Northwest sensibilities, made in batches of just 400 bottles at a time using organic and wild-harvested botanicals extracted through tiny pot stills, with no caramel added for color. The recipe centers on hibiscus, sarsaparilla, lemongrass, and ginger, rounded out with cinnamon, rhubarb root, and smoked paprika — genuinely one of the darker, spicier expressions in their range.
